Meat Etiquette in Ukraine

Meat is a staple in everyday Ukrainian cooking, so serving hearty portions of pork, chicken, beef, or sausage is normal at home and in restaurants, and a meal without it may feel incomplete to many people. Traditional dishes like borshch, varenyky with meat, holubtsi, and salo show how central meat and animal fat are to local comfort food, though fasting periods in the Orthodox calendar can temporarily reduce meat consumption.
