Meat Etiquette in Democratic Republic of the Congo

Meat is often served as a valued part of a meal in the Democratic Republic of the Congo, but portions may be modest and dishes are commonly built around cassava, plantains, rice, or fufu with meat as a flavoring or occasional centerpiece. In cities you may find goat, chicken, beef, or fish more easily than pork, and in some communities religious or local preferences shape what is eaten, so it is polite to accept what is offered and not assume meat will be the main focus of every meal.
